OIL ROASTING
DEFINITION:

In commercial oil roasting, the vegetable product is submerged in relatively high heat cooking oil for a short period of time. Also known as flat frying, this method of oil roasting is very well suited to a vast assortment of vegetables, as it not only sweetens, but also greatly intensifies flavor notes.

Oil roasted vegetables are used in a host of prepared food products including pastes, pastas, sauces, dips, soups and more.
