OVEN ROASTING
DEFINITION:

In commercial oven roasting, super heated air and flames are blown over the food product and circulated evenly so that all sides of the food are cooked uniformly. The duration of roasting time depends upon the desired result and the character of the vegetable that is being roasted.

Oven roasting gives vegetables a sweet, rich flavor, and also adds versatility, as there are a host of vegetables that are well suited to oven roasted.
